An Agave Harvest Season Calendar for the Tablelands
Harvest isn't a single day on the calendar. It's a rolling decision made plant by plant.
Because agave matures over years rather than a single growing season, there isn't one harvest month the way there is for grain or grapes, plants are assessed individually and cut when they're ready, spread across the year.
The Tablelands' distinct wet and dry seasons still shape the work: field access and roasting logistics are easier in drier months, even if the plants themselves don't follow that calendar strictly.
This is one of the clearest differences between agave and almost any other spirits ingredient. There's no single vintage, just a continuous, plant-by-plant harvest.
