Three expressions, three jobs.

Silver · Unaged

Bright, dry, mineral.

The cocktail workhorse. Margaritas, Palomas, anything with citrus, chilli or tropical fruit in it. Dry enough that the fruit builds do not turn to syrup.

Rested · Six months oak

Rounder, spiced, versatile.

Six months in ex-Barossa Shiraz American oak. Reach for it when a drink needs weight: elevated highballs, richer Margaritas, anything with cola, ginger or char in it.

Rich, dark, spirit-forward.

Two years in the same casks. Built for stirred drinks and for sipping neat at room temperature.

The small details

Three things that ruin a good Margarita.

Bottled lime

Preserved juice tastes cooked and flat. Squeeze it within the hour. It's the single biggest difference between a good Margarita and a bad one.

Fine table salt

Too fine, too iodised, and it dissolves into a salty film. Use flaked sea salt, and rim only half the glass so every sip is a choice.

Small, wet ice

Half-melted cubes over-dilute before the drink is cold. Shake with big, hard, dry ice and strain onto fresh. Never serve on the ice you shook with.

Roasted for flavour

Slow roasting breaks down the agave's stored fructans into fermentable sugars, and lays down the caramel and smoke you taste under the citrus.

Fermented and distilled

Batch fermentation, then a copper pot still. Copper strips the heavy sulphur notes and keeps the green agave character in.

Rested and aged

Blister-charred ex-Barossa Shiraz American oak. Six months makes Rested, two years makes Aged.

Silver · Unaged

Margarita and highball

The pouring bottle. Dry, mineral and peppery, so it holds its structure against fresh lime, chilli and tropical fruit. Every approved house spec on this page is built on it.

Rested · 6 months oak

Weight and oak

Dried fig, soft spice and fine red-wine tannin. Reach for it when a build needs body: cola, ginger or char, or a slow pour over one large cube. House cocktail specs are in final tasting.

Aged · 2 years oak

Neat and stirred

Vanilla, caramel and dried fruit from two years in the same casks. A back-bar pour and a stirred-drink base. House cocktail specs are in final tasting.
