- 45mLAgave Australis Silver
- 15mLCointreau or other dry orange liqueur
- 30mLFresh lime juice
- 15mLAgave syrup
- 2 dashesOrange bitters

If you’re making it at home
No dehydrated lime? A fresh wheel is fine. Agave syrup can be made at home by stirring agave nectar with an equal volume of warm water.
Method
- Rim half the coupette with flaked sea salt and chill it.
- Combine everything in a shaker with cold, hard ice.
- Shake hard for ten to twelve seconds.
- Double strain into the chilled glass.
Why Silver
Silver is dry, mineral and peppery, so it meets the lime head-on instead of dissolving into it. The 15mL of agave syrup is there to balance that dryness, not to sweeten the drink.
