Tasting notes
Mineral, not sweet.
- Colour
- Water clear.
- Nose
- Cut green agave, lime peel and a distinct wet-stone minerality. Faint smoke from the roasting pit underneath.
- Palate
- Dry and structured, with white pepper across the middle. The roasted-agave sweetness sits behind the mineral rather than in front of it.
- Finish
- Clean and peppery, with a faintly saline edge that lingers.
- Cask
- None. Bottled unaged.
- Serve
- Margarita, Paloma, or long over ice with soda.

Classic Margarita
- 45mLAgave Australis Silver
- 15mLCointreau or other dry orange liqueur
- 30mLFresh lime juice
- 15mLAgave syrup
- 2 dashesFee Brothers Orange Bitters
- RimFlaked sea salt, half the glass
Rim half a coupette with flaked sea salt and chill it. Shake everything hard with cold, hard ice for ten to twelve seconds, then double strain into the chilled glass. Salt only half the rim so every sip is a choice. The 15mL of agave syrup is there to balance the spirit’s dryness, not to sweeten the drink.
