Tasting notes
A sipping spirit, not a mixer.
- Colour
- Deep amber.
- Nose
- Vanilla and caramel over dark fruit, with roasted agave and a little woodsmoke behind it.
- Palate
- Full and layered. Two years of red-wine oak give it weight and dried-fruit sweetness, but the mineral spine from the basalt is still traceable underneath.
- Finish
- Long and warm, drying slowly through oak spice.
- Cask
- Reconditioned ex-Barossa Shiraz American oak, blister char. Two years.
- Serve
- Neat at room temperature, or over one large rock.

No ice. Cold shuts down the vanilla and caramel that two years in cask put there. A tulip-shaped glass concentrates the aroma; a shot glass throws it away. Give it five minutes in the glass before the first sip and the dried fruit opens right up.
