Blue agave doesn't belong to one country. On the volcanic soils of the Atherton Tablelands in Far North Queensland, the same plant that built an industry elsewhere has found a second home — grown, harvested and distilled entirely on Australian soil, under an Australian sun.

Agave Australis is made at Mt Uncle Distillery, led by head distiller Mark Watkins. It isn't built to reference Mexico — it's built to show what this plant becomes when it's grown somewhere else entirely: red earth, wet-season heat, and a copper pot still run by hand.
