Rested vs. Reposado: Why We Don't Use the Mexican Terms

Terms like blanco, reposado and añejo are part of Mexico's denomination of origin system for tequila, legally defined categories tied to a specific region and production standard.

Agave Australis isn't tequila, and it was never trying to be. It's an Australian agave spirit, grown and made entirely in Far North Queensland. Borrowing regulated Mexican terminology would misrepresent both the product and the place it comes from.

So the range is named in plain English instead: Silver, Rested, Aged. Same idea, unaged, briefly oaked, extensively oaked, described honestly rather than borrowed.
