What Makes Blue Agave "Blue"? A Field Guide

The plant behind every bottle isn't blue at all. Here's why growers call it that, and what to actually look for in the field.

Blue agave (Agave tequilana) gets its name from the faint blue-grey bloom on its leaves. A natural wax coating that reflects light and helps the plant hold water through dry stretches. Up close it reads more silver-green than blue, especially under the FNQ sun.

A mature plant takes years to build the sugar-dense heart, or piña, that eventually becomes spirit. Leaves are trimmed away at harvest, leaving a piña that can weigh well over 20 kilograms, all of it destined for the roasting pit.

On the Atherton Tablelands, the same plant grown in volcanic soil develops differently to its Mexican counterpart. A different mineral profile, different rainfall pattern, different sun angle. Same species, different place. That's the whole premise of an Australian agave spirit.
