Ingredients

60mLAgave Australis Silver
30mLFresh lime juice
15mLAgave syrup
2 dashesOrange bitters (house signature, optional)

Garnish

Half sea-salt rim · Fresh lime wedge

Method

Rim half a rocks glass with flaked sea salt.
Shake all ingredients hard with ice.
Strain over fresh cubed ice.

Why Silver

Taking out the orange liqueur removes the last thing standing between you and the spirit. This is the build to make if you want to taste what the Tablelands did to the plant.

Adapted to Agave Australis Silver from the established house Tommy's. Final spec requires tasting and sign-off.
