Far North Queensland: The Unlikely Home of Australian Agave

Rainforest, reef and red dirt. Not the usual mental picture for agave country, and that's exactly the point.

Far North Queensland is better known for rainforest and reef than for a desert plant like agave, but the Atherton Tablelands sit on a volcanic plateau with well-drained soils, distinct wet and dry seasons, and enough elevation to keep things from getting too tropical for the plant to thrive.

It's an unusual combination: agave typically associated with arid country, grown instead in a region famous for waterfalls and rainforest a short drive away.

That contrast is part of the story, not a footnote to it. This was never going to be a spirit that pretended to be from somewhere else.
