The Difference Between Tequila, Mezcal and Agave Spirit
All three start with the same plant family. The differences come down to place, process and legal definition.
Tequila is a legally protected term, made only from blue Weber agave, only in specific Mexican states, under Mexico's denomination of origin rules. Mezcal is a broader category, made from many agave varieties, mostly in Oaxaca, often using traditional earthen-pit roasting.
"Agave spirit" is the honest, unregulated term for anything distilled from agave outside those protected regions, which is exactly what Agave Australis is: 100% blue agave, grown and distilled entirely in Australia.
The plant crosses borders more easily than the legal names attached to it. What stays consistent is the process, grow, roast, ferment, distill, wherever it happens.
