Six months in reconditioned American oak that held Barossa Shiraz first. Long enough to round the edges and lay dried fruit over the top — short enough that the green agave core is still the loudest thing in the glass.

Tasting notes

Oak, without the costume.

Colour
Pale straw with a faint rose cast from the Shiraz cask.
Nose
Dried fig and baking spice first, then cooked agave and a little vanilla underneath.
Palate
Rounder and softer than Silver, with fine red-wine tannin across the middle. The pepper is still there, wrapped rather than removed.
Finish
Medium and warm, drying out into agave and light oak.
Cask
Reconditioned ex-Barossa Shiraz American oak, blister char. Six months.
Serve
On ice, or stirred like an Old Fashioned.

Stir it like a rye.

Agave Old Fashioned

  • 60mLAgave Australis Rested
  • 5mLAgave syrup
  • 2 dashAngostura bitters
  • TwistOrange

Stir over ice until properly cold, then strain over one large cube. The Shiraz cask gives Rested enough dried fruit and tannin to carry a stirred drink the way a rye whiskey would — but it finishes green and peppery, which no rye does.
