Why We Don't Rush the Rest

Oak ageing can be sped up artificially. Here's why that shortcut isn't part of this process.

There are commercial techniques to fake the appearance of barrel ageing quickly, small barrels for more wood contact, wood chips, even ultrasonic treatments. They can add colour and some wood flavour fast, but not the slow chemical changes that real time in oak produces.

Rested spends a genuine stretch resting in oak before bottling; Aged spends considerably longer again. Both are on the barrel's schedule, not a production deadline.

The trade-off is patience for character. A spirit that's actually changed over time rather than one that's been made to look like it has.
